Ingredients:
140g Raon Medium or Extra Spicy Kimchi, chopped roughly.
70g All-purpose flour
15g corn starch
90ml icy cold water
10ml Kimchi juice
1 tbsp vegetable oil
Optional:
10g thinly sliced onion
Optional dipping sauce:
(In a small container, combine all the lists of ingredients below and mix them thoroughly. Cover the lid and put it aside.)
1 tbsp soy sauce
1 tsp rice vinegar
½ tsp gochugaru
½ tsp sugar
1 tbsp water
Instructions:
- In a large bowl, combine the kimchi, flour, cornstarch, water, and the kimchi juice and mix everything.
- Heat one tablespoon of oil in a non-stick pan over medium heat.
- Ladle the mixture into the pan and spread it evenly into a thin, round shape.
- Cook until the edges turn golden brown, about 2 to 3 minutes. Flip the pancake over.
- Press the pancake down with a spatula.
- Cook until the other side is nicely golden brown and crispy, about 2 to 3 minutes.
- Repeat the process until there is no remaining batter.
- Serve hot with a dipping sauce, if desired.
